Irish Breakfast Sausage
We use a traditional family recipe for our pork breakfast sausage. They are similar to "bangers" but without MSG or bread filler. Instead we gently spice our home grown pork with freshly ground organic herbs and spices for a uniquely Irish-American breakfast treat. They pair nicely with our rainbow eggs and a hearty whole grain toast.

Smoked Grassfed Beef Sausages
Our skilled certified organic butchers at Leona Meats make smoked sausage from our lean grassfed beef. They are packed with flavor from robust organic spices so you feel satisfied despite the low fat content. All beef sausages are certified organic through NOFA-NY.
Smoked Andouille

Smoked Ring Bologna
Our artisan butchers place this sausage in a double casing and hang it by a ring in the smoker until the sweet peppery flavor has intensified to perfection. Just peel off the outer papery casing and this fully cooked bologna is ready to eat.
Other Pork Sausages
Our local butcher, family owned Steiner Meat Packing, has been a favorite vendor at the Delaware and Otsego County Fairs for over thirty years. In fact they have been preparing local meats for over five decades. We get countless compliments on the Hot and Sweet Italian Sausages they prepare for us. We recently added a pork chorizo sausage to be the Mexican style complement to our firmer Spanish style beef chorizo sausage. These sausages are not certified organic yet, but all the meat comes from our own homegrown whey-fed pigs.
