Raindance Farm - Sun Cheese
Sun Cheese is our artisinal semi-hard cheese made in the tradition of the Italian Alps. Both grass-fed and organic, we use whole, raw cow's milk in an Asiago recipe. This traditional cheese recipe was perfected over the centuries using milk from cows on grass meadows and with it the goodness in our milk shines. Sun Cheese is aged at least six months with a subtle flavor; creamy, grassy and sweet with a slow, nutty nuance. We are seasoned grazers, entering our twentieth year as enthusiastic graziers and our twelfth year certified organic with Nofa-NY. This year we are again honored by the National Dairy Quality Awards as a Gold finalist and the exceptional milk quality makes our cheese that much more healthy for the families like our own who enjoy it.
Why it is called "Sun Cheese" - Solar Assisted Cheesemaking
Our cheese actually stores solar energy indirectly by two pathways. First, Solar energy is captured by the grass our cows eat directly and converted into carbs. Our cows (with the help of beneficial bacteria in their stomach) convert these carbs into milk which goes into our cheese.Starting this year, Raindance farm will indirectly use solar energy to heat the milk during cheesemaking. Our cheese Vat has an outer water jacket that gently heats the milk to our required recipe temperatures using solar heated water. We can clean up with solar pre-heated water also. There is no point waiting for Governments to mandate energy efficiency. Start now by being as thrifty as you can with energy. Your children's children will thank you.
